Get a whole chicken, or parts if you don’t like cutting it up. Fill up your kitchen sink with water and add some salt, about a half cup. Let the chicken soak for a good twenty minutes.
Put a liberal amount of flour on a plate or platter. Bring the chicken out of the water and salt it slightly and black pepper if you like it, then roll each piece around in the flour. Once all the pieces are covered, put about three-quarters of a cup of vegetable oil in a deep skillet and heat it until you hear it crackle. Throw the chicken in and brown it on one side. Turn it and brown on the other side. Then reduce the heat to low-medium, and put the top on the skillet. Cook for twenty minutes and tell me it’s not good.
